The 325 grit Coarse diamond plate is ideal for honing badly worn edges to desired bevel angles quickly. This plate a reasonable sharp working edge, but it will not be razor sharp. Therefore, the blade would really need to be finished off, either in 650 or 1000 grit after the initial 325 run.

The 1000 grit Fine diamond plate is ideal for finishing and polishing the sharpen edge to a fine razor finish. Please note that 1000 is much slower to work with and although it will give a slightly longer lasting edge, it is really ideal for thing like filleting knives, straight razors etc.
